Main Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 cups cooked rice Preferably cold, leftover rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce Use low sodium if preferred
  • 2 cloves garlic, minced For aromatic flavor
  • 2 tablespoons green onions, sliced For garnish
  • 1 large egg Adds creaminess
  • 2 tablespoons oil (sesame or vegetable) For frying

Instructions
 

Preparation

  • If not using leftover rice, cook your rice according to package instructions and let it cool.
  • Dice your carrots, bell peppers, and green onions.
  • If using frozen shrimp, thaw and pat dry.

Cook/Assemble

  • In a large skillet or wok, heat a tablespoon of oil over medium-high heat.
  • Add the shrimp, cooking for 2-3 minutes or until pink.
  • Toss in the garlic and chopped veggies, stirring until slightly tender.
  • Mix in the rice and soy sauce, stirring well to combine.
  • Push the mixture to one side, crack the egg in and scramble it before mixing everything together.

Serve

  • Sprinkle with green onions and drizzle a bit more soy sauce.
  • Serve hot in bowls, making sure everyone gets a good mix of shrimp, rice, and veggies.

Notes

Use cold rice to prevent mushiness. Cook in batches if needed to avoid overcrowding the pan.
