Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the carrots, then slice them into even sticks or rounds for uniform cooking.
  • In a large mixing bowl, combine the carrots with olive oil, salt, and pepper (and garlic, if using). Toss well until all pieces are evenly coated.
  • Line a baking sheet with parchment paper to prevent sticking.

Cooking

  • Spread the coated carrots in a single layer on the prepared baking sheet.
  • Roast for 25-30 minutes, flipping halfway through, until the carrots are tender and lightly caramelized.

Serving

  • Remove from the oven and allow to cool slightly.
  • If desired, sprinkle with fresh herbs before serving.
