For the Roasted Carrots

  • 1 pound carrots Fresh and sweet, peeled and cut into 1-inch pieces.
  • 2 tablespoons olive oil Adds richness and helps achieve a golden, crispy finish.
  • 1 teaspoon salt Enhances the natural sweetness of the carrots.
  • 1/2 teaspoon black pepper Adds a touch of warmth and spice.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the carrots. Trim the ends and cut them into evenly sized pieces, about 1-inch long.
  • In a large bowl, toss the carrot pieces with olive oil, salt, and black pepper until they’re evenly coated. If using, add fresh rosemary for an herby twist.

Cooking

  • Spread the carrots out in a single layer on a large, lined baking sheet. Avoid overcrowding to allow for optimal roasting.
  • Put them in the preheated oven and roast for 20-25 minutes, tossing them halfway through for even browning.
  • They are done when they’re tender and slightly caramelized. A fork should slide in easily, and the edges should be golden brown.

Serving

  • Remove the roasted carrots from the oven and let them cool for a few minutes. This enhances their sweetness and makes them easier to handle.
  • Transfer them to a serving dish, garnishing with additional fresh rosemary if desired. Enjoy warm or at room temperature.

Notes

These roasted carrots are great for meal prep and can be stored in an airtight container for up to 4 days. They can also be frozen for up to 3 months. For reheating, warm them in the oven or microwave.
