Instructions

Preparation

  • Gather all your ingredients on the counter for easy access.
  • Dice the onion, carrots, and celery into small pieces for uniform cooking.
  • Mince the garlic and set aside.
  • Shred your cooked chicken if not already prepped, and place in a bowl.
  • Have your heavy cream and chicken broth ready for the next steps.

Cooking

  • In a large pot, heat a splash of olive oil over medium heat.
  • Add the diced onion, carrots, and celery, stirring frequently for about 5 minutes, or until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the chicken broth and bring to a gentle boil.
  • Once boiling, stir in the cheese tortellini, cooked shredded chicken, dried thyme, and basil.
  • Reduce the heat to a simmer and cook for 8-10 minutes until the tortellini are tender and cooked through.
  • Slowly stir in the heavy cream, allowing it to blend into the soup for a creamy consistency.
  • Season with salt and pepper to taste and heat for another minute.

Serving

  • Once everything is heated through, ladle the soup into bowls.
  • Garnish each bowl with freshly chopped parsley for a pop of color.
  • Serve immediately, possibly with crusty bread for dipping.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk. Store leftovers in airtight containers to keep them fresh longer. Freezing this soup may make the tortellini softer upon reheating.
