Preparation

  • Start by taking your New York strip steak out of the refrigerator and letting it rest at room temperature for about 30 minutes.
  • Pat the steak dry with paper towels to ensure a good sear.
  • Season both sides generously with salt and black pepper.
  • If using garlic and herbs, prepare them by chopping finely.

Cooking

  • Heat a cast-iron skillet over medium-high heat and add olive oil.
  • Once the oil is shimmering, add the steak to the skillet.
  • Cook for about 4-5 minutes on one side until a brown crust forms, then flip the steak.
  • Add garlic and herbs to the pan, basting the steak with the oil.
  • Cook for another 4-5 minutes for medium-rare, or until desired doneness. A meat thermometer should read 130°F (54°C) for medium-rare.

Serving

  • Remove the steak from the skillet and let it rest for 5 minutes before slicing.
  • Slice against the grain for the best texture.
