Preparation

  • Gather all your ingredients on a clean countertop.
  • Rinse the chicken breasts under cold water and pat them dry with paper towels.
  • Dice the mango, chop the cilantro, and mince the jalapeño.
  • Juice the lime, ensuring to capture all the tangy essence.
  • Season the chicken breasts with salt, pepper, and a drizzle of olive oil.

Cooking

  • Preheat your grill or air fryer to medium-high heat (375°F or 190°C).
  • Place the seasoned chicken breasts on the grill or in the air fryer.
  • Cook for about 6-8 minutes on each side, until the internal temperature reaches 165°F (74°C).
  • Meanwhile, in a separate bowl, combine the diced mango, lime juice, chopped cilantro, and minced jalapeño for the salsa.
  • Once the chicken is cooked, remove it from the heat and let it rest for 5 minutes.
