Preparation

  • Gather all your ingredients and equipment, including a mixing bowl and electric mixer.
  • Chill the mixing bowl in the refrigerator for about 10-15 minutes.
  • Measure out the mango puree and set aside at room temperature.
  • Dissolve the agar agar powder in 2 tablespoons of water, stirring well, then set it aside.

Cooking/Assembly

  • Pour the chilled heavy whipping cream into the chilled mixing bowl.
  • Using an electric mixer, start whipping the cream on medium speed until soft peaks form, approximately 3-5 minutes.
  • In a small saucepan, gently heat the agar agar mixture over low heat until it becomes clear—about 2-3 minutes.
  • Once the agar agar is ready, slowly pour it into the whipped cream, mixing on low speed.
  • Add the mango puree, cardamom, and saffron, folding gently with a spatula until the mixture is smooth and homogenous.

Serving

  • Transfer the mousse into serving cups or bowls, smoothing the tops with a spatula.
  • Cover the mousse and refrigerate for at least 1 hour to allow it to set.
  • Once set, serve chilled and enjoy! You can add fresh mango slices or a sprinkle of more cardamom on top for a garnish.

Notes

For best results, use pure organic mango puree without added sugars. Store leftovers in an airtight container for up to 3 days.
