Instructions
 

Preparation

  • Preheat the oven to 350°F (180°C) to prepare for baking.
  • Grease and flour or line an 8-inch or 9-inch loaf pan with parchment paper.

  • In another bowl, beat the eggs, egg yolk, sugar, and lemon zest for about 2-3 minutes until light.
  • Mix in the oil, ricotta, vanilla, lemon juice, and milk until just combined.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined, taking care not to overmix.
  • Pour the batter into the prepared pan and sprinkle slivered almonds on top.

Baking

  • Bake for 50-60 minutes, testing with a toothpick for doneness in the center.
  • Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes
