Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Gather all your ingredients and utensils for smooth sailing.
  • Cube the chicken breast and set aside, season with salt and lemon pepper.
  • In a mixing bowl, combine the rice, chicken broth, lemon juice, melted butter, lemon zest, garlic, onion powder, dried basil, black pepper, and thyme. Stir until smooth.

Cooking/Assembling

  • Spray a baking dish with non-stick spray.
  • Spread the rice mixture evenly into the prepared dish.
  • Layer the seasoned chicken evenly on top of the rice mixture.
  • Place thin slices of lemon on top for added flavor and visual appeal.
  • Cover the dish with aluminum foil and bake for 25 minutes.

Serving
