Ingredients

For the dough

  • 1.5 cups Warm Water
  • 1 tablespoon Instant Yeast
  • 1 tablespoon Granulated Sugar
  • 1 tablespoon Honey
  • 3.75 cups All-Purpose Flour
  • 1 tablespoon Salt Optional
  • 3 tablespoons Unsalted Butter (cubed)
  • 1 whole Egg White
  • 1 tablespoon Milk

Instructions

Preparation

  • In a bowl of a standing mixer, add warm water, yeast, sugar, and honey. Mix and let foam for 5 to 10 minutes.
  • Add all-purpose flour and mix on low for 4 minutes.
  • Increase speed to medium, sprinkle in salt, and mix for another 3 minutes.
  • Gradually add the cubed butter, mixing until incorporated, about 1-2 minutes.
  • Place the dough in a lightly oiled bowl, cover with a towel, and let rise for 1 to 2 hours.

Shaping and Baking

  • Line a baking sheet with silpat or parchment paper. Divide the dough into 4-8 pieces.
  • Shape each piece into a hoagie roll by flattening it into a rectangle, folding one end up, turning it 180 degrees, and folding the other end up. Pinch seams closed.
  • Place rolls seam side down, cover lightly, and let rise for another hour.
  • Preheat oven to 375ºF. Whisk together egg white and milk, brush over rolls, and make a slit on top.
  • Bake for 16 to 22 minutes until golden and sound hard when tapped.

Notes

For best results, be patient with rise times and try adding different spices or seasonings in the dough for variation.
