  • 2 medium Roasted Sweet Potatoes Peeled and cubed.
  • 2 cups White or Brown Rice (Cooked) Use cooked rice for a quick prep.
  • 1 cup Greek Yogurt (Or mayonnaise) For a creamy layer.
  • 1 bunch Fresh Cilantro or Parsley For garnish.

Seasonings & Oils

  • 1 teaspoon Garlic Powder For seasoning the chicken.
  • 1 teaspoon Onion Powder Adds sweetness to the chicken.
  • 1 teaspoon Paprika Enhances flavor.
  • 1 tablespoon Olive Oil For cooking and flavor.
  • 1 teaspoon Cumin Provides an earthy flavor.
  • 2 tablespoons Lime Juice (Fresh) Brightens up the dish.
  • 1 tablespoon Sriracha Adjust to taste for spice.

Optional Ingredients

  • Seasonal Vegetables (e.g., Spinach, Broccoli) Use as preferred.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the sweet potatoes into even pieces.
  • Season the sweet potatoes with olive oil, paprika, salt, and garlic powder, then spread them on a baking sheet.
  • Chop the chicken breast into bite-sized cubes and season with garlic powder, onion powder, and cumin.
  • Prepare the rice according to package instructions or use leftover rice.

Cooking

  • Roast the sweet potatoes in the oven for about 25-30 minutes, until tender.
  • Heat a skillet over medium-high heat and add olive oil.
  • Add the seasoned chicken to the skillet and cook for 6–8 minutes, until golden brown and cooked through.
  • Mix in lime juice and Sriracha to the cooked chicken.

Serving

  • Start with a base of rice in your serving bowl.
  • Add roasted sweet potatoes and sautéed chicken on top.
  • Drizzle with Greek yogurt and sprinkle with chopped cilantro or parsley.
  • Add extra Sriracha if desired.

Notes

Tip: These bowls can be meal prepped and stored in airtight containers for up to 4 days. For freezing, store for about 3 months, but note texture changes may occur.
