For the crust

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add chopped leeks and sauté for about 5 minutes until soft and fragrant.
  • Stir in the fresh spinach and cook until wilted, which should take another 3-4 minutes.
  • Remove from heat and let the mixture cool slightly.
  • Add crumbled feta, salt, and pepper, mixing well to combine.

Cooking/Assembling

  • Grease a baking dish with olive oil.
  • Layer five sheets of phyllo dough, brushing each with a bit of olive oil.
  • Spread half of the spinach mixture over the phyllo.
  • Layer five more sheets of phyllo, brushing with olive oil, then spread with the remaining spinach mixture.
  • Top with another five sheets of phyllo, brushing them again with olive oil.
  • Score the top layers into squares with a sharp knife for serving.
  • Bake in the preheated oven for 30-35 minutes or until golden brown.

Serving

  • Remove the pie from the oven and let it cool for 5-10 minutes.
  • Slice through the scored lines for easy servings.
  • Serve warm, garnished with fresh herbs if desired.
  • Enjoy with a crisp side salad for a complete meal!

Notes

Use fresh spinach for the best flavor. For added texture, brush the top layer of phyllo generously with olive oil. Store any leftovers in an airtight container.
