Preparation

  • Gather all your ingredients, making sure everything is at room temperature for optimal mixing.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.
  • In a separate bowl, blend the buttermilk, egg, and melted butter until smooth.
  • Pour the wet ingredients into the dry ingredients. Stir gently until just combined—don’t worry about a few lumps!
  • In a small bowl, mix the brown sugar and cinnamon for the filling.

Cooking

  • Heat a nonstick skillet or griddle over medium heat (about 350°F or 180°C). Grease lightly if necessary.
  • Pour 1/4 cup of the pancake batter onto the skillet.
  • Immediately sprinkle a teaspoon of the cinnamon sugar mixture in the center of the pancake.
  • Cook for about 2–3 minutes until bubbles form on the surface, and the edges appear set. Flip gently.
  • Cook for another 2–3 minutes on the other side until golden brown. Repeat with the rest of the batter.

Serving

  • Stack pancakes on a serving plate, layering them for an inviting presentation.
  • If desired, drizzle with a cream cheese glaze or additional cinnamon sugar while still warm.
