Ingredients

For the Marinate

  • 1/2 cup coconut milk Adds creaminess without the calories.
  • 2 tablespoons soy sauce Brings a savory, umami flavor.
  • 1/4 cup freshly squeezed lime juice Zesty brightness that cuts through richness.
  • 3 teaspoons Gourmet Garden Stir-in Garlic Paste Quick and easy flavor boost.
  • 1 tablespoon brown sugar Sweetness to balance the flavor.
  • 1 teaspoon Gourmet Garden Stir-in Ginger Paste Adds warmth and spice.
  • 1 teaspoon Gourmet Garden Lightly Dried Cilantro Herbal freshness.
  • 1 teaspoon curry powder Offers unique depth of flavor.
  • 1 pound boneless skinless chicken breast tenders The protein hero of the dish.

For the Peanut Sauce

  • 1/2 cup creamy peanut butter Rich, nutty flavor; crucial for the sauce.
  • 1 tablespoon lime juice More zing to the sauce.
  • 1 tablespoon vegetable oil For grilling.
  • 1 teaspoon curry powder Extra flavor in the sauce.
  • 2 teaspoons Gourmet Garden Stir-in Garlic Paste More garlicky goodness.
  • 1/4 cup coconut milk To make the sauce creamy.
  • 1 tablespoon sriracha Add more for spice.
  • 1/2 teaspoon Gourmet Garden Lightly Dried Cilantro For top flavor.
  • 2 tablespoons brown sugar Sweetness for the sauce to shine.

Instructions

Preparation

  • In a mixing bowl, combine the coconut milk, soy sauce, lime juice, garlic paste, brown sugar, ginger paste, cilantro, and curry powder.
  • Add the chicken tenders, making sure they’re well-coated, and let them marinate for at least 30 minutes (longer for more flavor!).
  • In another bowl, mix peanut butter, lime juice, vegetable oil, another teaspoon of curry powder, garlic paste, coconut milk, sriracha, and brown sugar until smooth. Adjust thickness with more coconut milk if needed.

Cooking

  • Preheat the grill (or a grill pan) to medium-high. If using wooden skewers, soak them in water beforehand to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, leaving a little space in between.
  • Place the skewers on the grill, cooking for about 4-5 minutes on each side until golden brown and cooked through.

Serving

  • Arrange the grilled chicken satays on a platter.
  • Generously drizzle or serve with the peanut sauce.
  • Add some fresh cilantro or lime wedges on top for a lovely touch.
  • Serve with steamed rice or salad for a complete meal!

Notes

Double the batch and store leftovers in the fridge. Great for quick lunches! Swap coconut milk for almond milk for a unique twist.
