Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground chicken, breadcrumbs, parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper.
  • Use clean hands to mix the ingredients until just combined, being careful not to overmix.
  • Shape the mixture into equal-sized meatballs, about 1.5 inches in diameter.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the meatballs in batches, cooking for about 4 minutes on each side until they are golden brown.
  • Once browned, transfer meatballs to a baking dish.
  • Pour marinara sauce evenly over the meatballs, making sure they are well-covered.
  • Bake in the preheated oven for 20 minutes, or until the internal temperature reaches 165°F (74°C).

Serving

  • Remove the baking dish from the oven and let it cool for a few minutes.
  • Garnish with additional parmesan and fresh herbs if desired.
  • Serve over low-carb pasta or alongside roasted vegetables for a wholesome meal.

Notes

For best results, allow the meatball mixture to rest for 15 minutes before cooking. These meatballs are meal prep friendly and can be frozen for up to 3 months.
