Base Ingredients

  • 24 pieces lady fingers The base of the dessert, they absorb the coffee and soften beautifully.
  • 2 tbsp unsweetened Dutch processed cocoa Dusting ingredient that enhances flavor and aesthetics.

Preparation

  • In a large bowl, beat together the sugar and egg until frothy for 2-3 minutes.
  • Add the cold coffee, mascarpone, and cream, and beat until thickened to your desired consistency.

Assembly

  • Place cold coffee in a large dish. Quickly dip lady fingers in coffee, making sure not to let them soak too long.
  • Layer dipped cookies in an 8 inch baking dish with half of the filling, then repeat for a second layer.

Chilling

  • Refrigerate for at least 3-4 hours or overnight to let the flavors meld.

Serving

  • Before serving, dust with cocoa or chocolate shavings. This dessert can be served in individual glasses or ramekins for added flair.

Notes

Best served chilled and can be made in advance, saving time on busy days. Transform leftovers into a layered parfait with yogurt and fruits.
