Preparation

  • In a medium bowl, mix together the oyster sauce, soy sauce, dark soy sauce, water, light brown sugar, and fish sauce until well combined.
  • Bring a pot of water to a boil and cook the rice noodles according to package directions. Drain and toss them lightly with vegetable oil.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat. Add the sliced chicken and sauté until fully cooked and golden. Remove chicken from the skillet and set aside.
  • In the same skillet, add the sliced birds eye chiles and cook for about 30 seconds. Then, add the sliced red bell pepper and green onions, stir-frying for 2-3 minutes until slightly tender.
  • Add the cooked noodles to the skillet and pour the prepared sauce over, tossing everything to coat evenly.
  • Add the cooked chicken back into the skillet along with Thai basil leaves, tossing until combined and heated through.
  • Plate up your drunken noodles, serving with lime wedges, sriracha, or hot sauce for extra flavor.

Notes

Prepare all ingredients before starting to ensure smooth execution. Cook noodles to retain slight chewiness. Adjust chiles for heat preference and feel free to add more vegetables or proteins.
