- 70 g Peanut butter Use 100% natural without xylitol.
- 140 g Plain Greek yogurt For frosting and added moisture.
- 1 large Egg Acts as a binder.
- 2 tbsp Natural peanut butter For extra indulgence topping.
- 1 tbsp Cornstarch Helps with cake structure.
Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground oats, baking powder, and cornstarch.
- Add the grated carrot, mashed banana, peanut butter, Greek yogurt, and egg to the dry ingredients.
- Mix the ingredients until well combined, feeling the texture change as you incorporate the yogurt and nuts.
- Pour the batter into a greased cake pan.
- Bake in the preheated oven for 30 minutes or until a toothpick comes out clean.
- Let the cake cool completely before frosting.
Frosting
- Once cool, spread the natural peanut butter or Greek yogurt on top of the cake for frosting.
