Preparation

  • Boil water in a large pot over high heat.
  • Add pasta and cook according to package instructions, typically about 10-12 minutes or until al dente.
  • While the pasta cooks, chop the dill pickles and dice the red onion.
  • Gather the dressing ingredients: mayonnaise, sour cream, pickle juice, and fresh dill.

Cook/Assemble

  • Once the pasta is cooked, drain and rinse under cold water to cool.
  • In a large mixing bowl, combine the cooled pasta, chopped dill pickles, and diced red onion.
  • In a separate bowl, mix the mayonnaise, sour cream, pickle juice, and fresh dill until smooth.
  • Pour the dressing over the pasta mixture and stir to coat everything well.
  • Season with salt and pepper to taste, adjusting as needed.

Serve

  • Transfer the salad to a large serving bowl.
  • Chill in the refrigerator for at least 30 minutes before serving.
  • Garnish with additional fresh dill if desired.

Notes

For extra protein, add diced grilled chicken or chickpeas. Use Greek yogurt instead of sour cream for a lighter option. Chill overnight for enhanced flavors.
