Preparation

  • Peel the plantains by slicing down the length to remove the skin easily.
  • Cut the plantains into 1-inch pieces for even cooking.
  • In a mixing bowl, mash the plantain pieces until smooth.
  • Mix in the kosher salt, tasting for seasoning.
  • Fold in the Haitian Pikliz, distributing it evenly.

Cooking

  • Heat oil in a pot over medium-high heat until it reaches 350°F (175°C).
  • Shape the plantain mixture into golf ball-sized balls.
  • Gently drop in a few plantain balls at a time, avoiding overcrowding.
  • Fry for 3-4 minutes until golden brown, flipping occasionally.
  • Use a slotted spoon to remove from oil and drain on paper towels.

Serving

  • Allow the plantain balls to cool slightly before serving.
  • Serve warm as an appetizer or snack, optionally with a side of your favorite dipping sauce.
