Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease your cake pan and line the bottom with parchment paper to prevent sticking.
  • In a large mixing bowl, combine the all-purpose flour, cocoa powder, baking powder, baking soda, and salt; whisk together until well combined.
  • In another bowl, cream together the melted butter and granulated sugar until light and fluffy.
  • Add the eggs and vanilla extract to the butter mixture, mixing thoroughly until incorporated.
  • Gradually mix in the dry ingredients, alternating with the buttermilk until a smooth batter forms.

Cooking

  • Pour the batter into the prepared cake pan and spread evenly.
  • Bake in the oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Once the cake is cooling, prepare the mousse by melting the semi-sweet chocolate with additional butter over a double boiler until smooth.
  • In a separate bowl, whisk the egg yolks with half the sugar until pale; then mix into the melted chocolate.
  • In another bowl, beat the egg whites until stiff peaks form, gradually adding remaining sugar.
  • Gently fold the whipped egg whites into the chocolate mixture, being careful to maintain fluffiness.
  • In another bowl, beat the heavy cream with vanilla until soft peaks form; fold this into the chocolate mixture.

Serving

  • Once the cake is completely cool, place it on a serving dish.
  • Spoon the chocolate mousse over the top, using a spatula to create an even layer.
  • Chill in the refrigerator for at least 2 hours to set the mousse.
  • Just before serving, top with whipped cream, chocolate shavings, and a scattering of fresh berries.

Notes

Ensure your eggs are at room temperature for better incorporation. Store the mousse cake in an airtight container in the fridge for up to 5 days. Make the mousse a day ahead for improved flavor as it chills.
