  • 1 cup Feta cheese, crumbled Keep separate until ready to serve to prevent sogginess.
  • 1/2 medium Red onion, finely chopped
  • 1/4 cup Fresh mint, chopped Reserve some for garnish.
  • 2 tablespoons Olive oil Drizzle as needed.
  • 1/2 teaspoon Salt Adjust to taste.

Preparation

  • Wash the cucumbers and watermelon thoroughly.
  • Slice cucumbers into half-moons.
  • Cube the watermelon into bite-sized pieces.
  • Finely chop the red onion and fresh mint.

Mixing

  • In a large mixing bowl, combine the cucumbers and watermelon.
  • Add in the feta cheese, red onion, and mint.
  • Drizzle with olive oil and a sprinkle of salt.

Serving

  • Toss the salad gently to combine all ingredients.
  • Serve chilled or at room temperature.
  • Garnish with extra mint before serving if desired.
