Preparation

  • Rinse the cucumber under cool water.
  • Remove the ends of the cucumber and dice it into small, bite-sized pieces.
  • Mince one clove of garlic finely.
  • Gather all ingredients.

Cook/Assemble

  • In a mixing bowl, combine diced cucumber, tahini, lemon juice, minced garlic, salt, and pepper.
  • Using a fork or potato masher, smash and mix until well incorporated and slightly chunky.
  • Drizzle olive oil over the top, taste, and adjust seasoning.
  • Transfer to a serving bowl and garnish with chopped parsley.

Serve

  • Serve the Cucumber Tahini Smash in a bowl at the center of the table.
  • Accompany with raw vegetables or whole-grain crackers.
  • Let it sit for about 10 minutes before serving to enhance flavors.

Notes

For creamier consistency, blend in a food processor. Store leftovers in an airtight container for up to 3 days.
