Preparation

  • Gather all your ingredients and utensils, including a sharp knife and cutting board.
  • Wash the cucumbers and avocados under cool running water.
  • Dice the cucumbers into bite-sized pieces for better texture.
  • Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Dice into cubes.
  • Chop the fresh herbs finely and set aside.

Cook/Assemble

  • In a large mixing bowl, combine the chopped cucumbers, diced avocados, and crumbled feta cheese.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until combined.
  • Pour the dressing over the salad mixture and gently toss to combine, ensuring the avocado doesn’t get mushy.
  • Sprinkle chopped herbs on top and give a final light toss.
