Preparation

  • Gather all your ingredients to streamline the cooking process.
  • Dice the onion and bell pepper into small pieces for even cooking.
  • Drain and rinse the black beans and corn thoroughly to remove excess sodium.
  • Set the diced chicken breasts aside for easy layering.

Cooking

  • Place the diced onion and bell pepper at the bottom of the crockpot.
  • Add the black beans and corn on top of the veggies.
  • Layer the chicken breasts over the beans and corn, ensuring they’re evenly spaced.
  • Pour the diced tomatoes with green chilies over everything, followed by the chicken broth.
  • Add the taco seasoning, salt, and pepper, and stir gently to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.

Serving

  • Carefully remove the chicken and shred it using two forks.
  • Return the shredded chicken to the crockpot and stir well.
  • Check the seasoning and adjust with additional salt and pepper if needed.
  • Spoon into bowls and serve hot, garnishing with your favorite toppings.

Notes
