Ingredients

Main Ingredients

  • 4 pieces Chicken Thighs Juicy and flavorful, perfect for slow cooking.
  • 1/2 cup Apricot Jam Adds sweetness and a beautiful glaze.
  • 1/4 cup Soy Sauce Brings depth and umami flavor to the dish.
  • 1 packet Onion Soup Mix Infuses savory notes that enhance the overall flavor.
  • 1 teaspoon Salt Balances the sweetness of the apricot.
  • 1/2 teaspoon Pepper Adds a hint of spice for depth.

Instructions

Preparation

  • Gather all ingredients and equipment, including your crockpot and measuring utensils.
  • Deselect any excess fat from the chicken thighs for a healthier meal option.
  • In a large bowl, combine apricot jam and soy sauce with the onion soup mix, salt, and pepper until well mixed.

Cooking

  • Place the prepared chicken thighs into your crockpot in a single layer.
  • Pour the apricot mixture over the chicken evenly to ensure full coverage.
  • Set your crockpot on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.

Serving

  • Once done, check that the chicken reaches an internal temperature of 165°F (75°C).
  • Using tongs, transfer the chicken to a serving plate, letting excess sauce drip back into the pot.
  • Serve warm with rice, vegetables, or whatever side you prefer, drizzling some of the cooked sauce over the top.

Notes

For extra flavor, sear the chicken thighs in a pan for 2-3 minutes per side before adding to the crockpot. If you want a thicker sauce, remove the lid during the last hour of cooking. Store leftovers in airtight containers for easy access throughout the week.
