Preparation

  • Mix dry ingredients. Stir cornmeal, flour, sugar, baking powder, cinnamon, and salt together in a medium bowl until well combined.
  • Prepare the topping. Cut in cold butter until small crumbs form.
  • Add buttermilk. Stir in buttermilk just until combined, then chill in the fridge for 5-10 minutes.
  • Prepare the apple filling. In a greased slow cooker, combine all filling ingredients and stir well.
  • Top the filling. Evenly spoon the chilled topping over the apple filling.
  • Cook the cobbler. Cook on HIGH for 2.5 hours, until the topping is puffy and filling is bubbly.

Notes

Use a variety of apples for balance and don't skip integrating spices like nutmeg or vanilla for added flavor. Let the cobbler sit for a few minutes after cooking for best texture.
