Preparation

  • In a food processor, pulse together the cornflakes, paprika, garlic powder, Parmesan cheese, and Italian seasoning until fine crumbs form, then transfer to a wide shallow plate.
  • In a medium bowl, lightly beat the eggs with water, salt, and black pepper to create the egg wash.
  • Set your oven to 425°F and prepare for baking, or preheat your air fryer according to its instructions.
  • Line a rimmed sheet pan with parchment paper and drizzle or brush melted butter onto the parchment.

Coating

  • Dip a chicken strip in the egg wash, allowing excess to drip off, then dredge it in the cornflake crumbs, pressing lightly to adhere.
  • For a thicker crust, repeat dipping in the egg wash and crumbs before placing on the sheet pan.
  • Lay the coated chicken strips on the prepared sheet pan in a single layer, ensuring about an inch of space between each strip.
  • Lightly spray the tops of the chicken strips with oil spray.

Cooking

  • Bake for 20-30 minutes or until golden brown and crispy, with an internal temperature of at least 165°F measured with a meat thermometer.
