Preparation

  • Preheat your oven to 425°F (220°C).
  • Rinse and scrub the baby potatoes thoroughly under cool running water to remove any dirt.
  • Cut each potato in half to allow for even cooking and increase surface area.
  • In a large mixing bowl, combine the halved potatoes with olive oil, minced garlic, chopped rosemary, salt, and pepper. Toss until evenly coated.

Cooking

  • Spread the coated potatoes in a single layer on a baking sheet, ensuring they are not overcrowded.
  • Roast in the preheated oven for 25-30 minutes until golden brown and crispy on the outside, stirring halfway through.
  • Check for doneness by piercing a potato with a fork; it should be tender inside and crispy outside.

Serving

  • Once cooked, remove the potatoes from the oven and let them cool slightly for about 5 minutes.
  • If desired, sprinkle with more salt or freshly grated Parmesan cheese.
  • Transfer to a serving platter, and garnish with additional rosemary or herbs for color. Serve warm and enjoy!

Notes

For extra crispy potatoes, soak halved potatoes in cold water for 30 minutes before cooking. Store leftovers in an airtight container in the fridge for up to 4 days; reheating in the oven retains crispiness.
