Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the small potatoes thoroughly and place them in a large pot.
  • Cover the potatoes with water and add a generous pinch of salt.
  • Bring the pot to a boil over medium-high heat.
  • Cook the potatoes for about 15-20 minutes or until fork-tender.

Cooking & Assembling

  • Drain the potatoes and let them cool for a few minutes.
  • On a baking sheet lined with parchment paper, place the potatoes and use a fork to gently smash each one until slightly flattened.
  • Drizzle the olive oil evenly over the smashed potatoes, ensuring they’re well-coated.
  • Sprinkle the minced garlic, followed by Parmesan cheese, salt, and pepper over them.
  • Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy.

Serving

  • Remove the baking sheet from the oven and let the potatoes cool slightly.
  • Transfer them to a serving platter and garnish with fresh parsley.
  • Serve warm alongside your favorite main dish.

Notes

For extra crunch, use a broiler for the last 2-3 minutes of baking. Store leftover smashed potatoes in an airtight container. You can freeze these potatoes for longer storage but note that their texture may soften.
