Preparation

  • Gather all ingredients on your kitchen counter.
  • Preheat oil in a frying pan over medium heat (about 350°F or 175°C).
  • Prepare three bowls: one with flour (seasoned with salt and pepper), one with beaten eggs, and one with a mixture of shredded coconut and breadcrumbs.
  • Slice the chicken breasts into strips for even cooking.

Cooking

  • Dip each chicken strip in the flour, ensuring it’s fully coated.
  • Next, dunk it into the beaten eggs, allowing excess egg to drip off.
  • Finally, coat the chicken in the coconut-breadcrumb mixture, pressing gently for a firm coating.
  • Fry the coated chicken strips in the hot oil for about 4-5 minutes on each side, or until golden brown.
  • Remove chicken and set on a paper towel-lined plate to drain excess oil.

Serving
