Preparation

  • Begin by preparing your chicken. Cut 1 pound of chicken breasts into bite-sized pieces.
  • Set up a breading station: in one bowl, place 1 cup of corn starch; in another, beat 2 eggs; and in a third, add 1 cup of panko breadcrumbs.
  • Season the chicken pieces with salt and pepper to taste.
  • Prepare the bang bang sauce by mixing 1/2 cup of mayonnaise, 1/4 cup of sweet chili sauce, 2 tablespoons of sriracha, and 1 tablespoon of lemon juice in a bowl. Stir until smooth.

Cooking

  • Heat oil in a deep skillet over medium-high heat until it reaches 350°F (175°C).
  • Coat each piece of chicken in corn starch, dip into the beaten eggs, then roll in panko breadcrumbs.
  • Fry the coated chicken pieces in batches for about 4-5 minutes until golden brown, turning occasionally.
  • Use a slotted spoon to remove the cooked chicken and place it on a paper towel-lined plate to absorb excess oil.

Serving

  • Transfer the crispy chicken to a serving plate.
  • Drizzle the prepared bang bang sauce generously over the chicken pieces.
  • For an added touch, garnish with chopped green onions or sesame seeds, and enjoy while hot!

Notes

For extra crunch, double dip each chicken piece in the egg and breadcrumbs. Store leftovers in an airtight container in the fridge for up to 3 days.
