Preparation

  • Wash the zucchini thoroughly and trim off the ends.
  • Chop the zucchini into small, even pieces for uniform cooking.
  • Peel and dice the onion and mince the garlic.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute, stirring frequently.
  • Stir in the zucchini pieces and season with salt and pepper; cook for 7-10 minutes, or until the zucchini is tender.
  • Pour in the vegetable broth and bring to a simmer.
  • Once simmering, blend the mixture until smooth and creamy using an immersion blender.
  • Stir in the Parmesan cheese until melted and well combined.

Serving

  • Allow the sauce to cool slightly before serving.
  • Serve warm over your favorite pasta, grilled chicken, or as a dip.
  • Garnish with fresh herbs if desired for added color and flavor.

Notes

For an extra creamy texture, blend the sauce longer. Store leftovers in an airtight container up to 4 days. The sauce freezes well for up to 2 months.
