Preparation

  • Gather all ingredients and place them on your counter for easy access.
  • Pat the salmon dry and season both sides with salt and black pepper.
  • Smash and mince the garlic and roughly chop the spinach and fresh basil.
  • Halve the cherry tomatoes for a pop of color and sweetness.

Cooking

  • In a large skillet, heat olive oil over medium-high heat.
  • Place the seasoned salmon fillets skin-side down in the hot pan. Sear for about 4-5 minutes until golden brown.
  • Carefully turn the salmon over and cook for another 4 minutes, or until cooked through. Remove from the pan and set aside.
  • Melt the butter in the same skillet. Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Stir in the halved cherry tomatoes and soften for 2-3 minutes.
  • Pour in the heavy cream, stirring until you have a luscious sauce.
  • Season the sauce with dried basil, cayenne pepper, kosher salt, and black pepper to taste.
  • Stir in the parmesan cheese until melted, then add the chopped spinach until wilted.

Serving

  • Gently return the salmon fillets to the skillet, spooning the creamy mixture over.
  • Top with fresh basil for an aromatic finale.
