Ingredients

Pasta

  • 8 oz spaghetti or fettuccine Choose your favorite pasta shape for the perfect bite.

Sauce Ingredients

  • 1 cup ripe tomatoes (diced) Fresh tomatoes provide sweetness and color; you can use canned for convenience.
  • 1 cup heavy cream Adds richness and that creamy texture; swap for coconut milk for a dairy-free option.
  • 4 cloves fresh garlic (minced) Offers warmth and depth; using roasted garlic with a sweet undertone is a fantastic swap.
  • 2 tbsp extra virgin olive oil Essential for a luscious mouthfeel; can substitute with butter for extra richness.
  • 1/4 cup fresh basil (chopped) Brightens the dish; dried basil can work if fresh isn’t available.
  • Salt and pepper to taste Enhances all the flavors.

Instructions

Preparation

  • Boil a pot of salted water for pasta.
  • Dice fresh tomatoes and mince garlic.
  • Chop fresh basil for garnish.

Cooking

  • Add pasta to boiling water and cook as per package instructions until al dente.
  • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add diced tomatoes and cook until softened, then stir in heavy cream.

Serving

  • Drain pasta and add it to the skillet.
  • Toss together until pasta is fully coated in the creamy sauce.
  • Top with fresh basil, salt, and pepper before serving.

Notes

For extra richness, use a splash of pasta water when combining it with the sauce. Try adding a pinch of chili flakes for a little heat. Make it ahead by prepping ingredients and storing them separately until cook time. If you're low on time, opt for pre-diced tomatoes or jarred tomato sauce.
