Preparation

  • If using chicken breast, cut the chicken lengthwise and crosswise into 8 cutlets. Lightly pound the chicken between two sheets of plastic wrap to tenderize.
  • Rub the chicken with oil and sprinkle with the seasoning, gently rubbing it in.

Cooking

  • Warm a large skillet over medium-high heat.
  • Add the chicken to the skillet and sear until golden brown on each side. Remove to a plate and set aside.
  • Reduce the heat to medium and add the remaining oil, then sauté the onion until softened, about 5-6 minutes. Add the garlic and cook for an additional 30 seconds.
  • Stir in the sun-dried tomatoes for about 30 seconds, then mix in the tomato paste until fragrant, approximately 30-60 seconds.
  • Stir in the halved cherry tomatoes and cook until they begin to soften, about 3-5 minutes. Season lightly with salt and pepper.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the pesto and bring to a simmer.
  • Cut 3/4 of the basil into ribbons and add to the pan. Simmer for 3-4 minutes, allowing the sauce to reduce slightly.
  • Reduce heat to the lowest simmer. Whisk the heavy cream and cornstarch together in a measuring cup, then stir into the sauce.
  • Stir well and add the chicken back into the pan, simmering gently until it reaches an internal temperature of 165°F.
  • Taste and adjust cream and seasoning as preferred. Serve the chicken over pasta with extra basil and grated Parmesan cheese if desired.

Notes

To ensure a perfectly cooked chicken, use a meat thermometer to check for a temperature of 165°F throughout. Consider letting the chicken marinate in the seasonings for at least 30 minutes before cooking. You can substitute heavy cream with half-and-half for a lighter option. Incorporate fresh herbs at the end of cooking to help retain their vibrant flavor.
