Preparation

  • Gather all your ingredients and ensure they are fresh.
  • Slice the smoky sausage into bite-size pieces.
  • Chop the onion and mince the garlic.
  • Rinse the fresh spinach and chop roughly if desired.
  • Bring 6 cups of water to a boil in a large pot and season with a pinch of salt.

Cooking

  • Add the penne pasta to the boiling water and cook according to package directions, about 10-12 minutes.
  • In a large skillet on medium heat, sauté the sliced smoky sausage until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the sausage, cooking for an additional 3-4 minutes until the onions are translucent.
  • Pour in the heavy cream, stirring to combine.
  • Reserve 1 cup of pasta water, then drain the rest and add the pasta directly to the skillet.
  • Stir in the fresh spinach, allowing it to wilt slightly.

Serving

  • Stir everything gently to combine, adding reserved pasta water to reach desired creaminess.
  • Grate fresh Parmesan cheese over the top and serve immediately.
