Instructions
 

Preparation

  • Peel and chop the hard-boiled eggs into small pieces.
  • Dice the onion and green pepper, and chop the celery and shredded cabbage.
  • Measure out the sweet pickle relish, yellow mustard, and sugar.
  • Gather the seasonings: celery seed, black pepper, and salt.

Cook/Assemble

  • Cook the elbow macaroni in salted boiling water until al dente, about 8-10 minutes.
  • Drain the pasta and rinse it under cold water to stop the cooking process; let it cool.
  • In a large bowl, add the cooled pasta, chopped eggs, diced onion, green pepper, celery, and shredded cabbage.
  • In a separate bowl, mix together the mayonnaise, yellow mustard, sugar, vinegar, salt, and celery seed until well combined.
  • Pour the dressing over the pasta and veggie mixture and stir gently to coat everything evenly; season with black pepper to taste.

Serve

  • Cover the bowl and let the salad chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  • When ready to serve, stir gently, adjusting seasoning if necessary.
  • Transfer to a serving bowl or individual plates. Enjoy as a main dish or side.

Notes

Chill your pasta salad for at least an hour for improved flavor. Store leftovers in airtight containers for up to 3 days.
