Preparation

  • Rinse broccoli and cut it into small, bite-sized florets. Set aside.
  • Dice the chicken breast into uniform pieces for even cooking.
  • Chop garlic finely to release its aromatic flavors.

Cooking

  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Add diced chicken and sauté for 5-7 minutes until browned and cooked through, reaching an internal temperature of 165°F (75°C).
  • Stir in garlic and cook for an additional minute until fragrant.
  • Pour in chicken broth and bring to a simmer.
  • Add rice and broccoli, mixing well. Cover and cook for 15 minutes on low heat.
  • After 15 minutes, stir in Parmesan cheese until melted and creamy.

Serving

  • Remove skillet from heat and let sit covered for 5 minutes.
  • Serve hot, garnished with additional Parmesan if desired.

Notes

For extra creaminess, add a splash of milk or cream alternative. Season chicken with spices before cooking for enhanced flavor. Store leftovers in airtight containers in the fridge for up to 4 days.
