  • Bring a large pot of water or chicken broth to a gentle boil over medium-high heat.
  • Add the florets to the boiling broth, ensuring they’re fully submerged. Allow them to cook for about 10-12 minutes.
  • The cauliflower should be fork-tender—perfect for mashing!

Cook/Assemble

  • Carefully drain the cauliflower florets in a colander, allowing excess liquid to escape.
  • Transfer the florets to a large mixing bowl or food processor, adding the grated parmesan, a pinch of kosher salt, and freshly ground black pepper.
  • Puree or mash the mixture until it reaches your desired smoothness, being cautious not to over-process.
  • Stir in the chopped chives for added flavor and freshness.

Serve

  • Ensure the creamy mashed cauliflower is warmed through; if necessary, reheat gently on the stove.
  • Transfer the mixture to a serving bowl, sprinkling additional chives on top.

Notes
