Preparation

  • Gather all your ingredients and equipment: a large pot for boiling pasta, a skillet for sautéing, and a mixing bowl for the sauce.
  • Bring a large pot of salted water to a rolling boil over high heat.
  • While waiting for the water, zest and juice your lemon, mince the garlic, and chop the fresh parsley.
  • Set aside the ricotta cheese and Parmesan for the sauce.

Cooking

  • Add pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
  • In a separate skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1-2 minutes.
  • Lower the heat and add ricotta cheese, lemon juice, and half of the Parmesan cheese to the skillet, stirring until combined and creamy.
  • When the pasta is done, reserve a cup of pasta water, then drain the pasta and add it directly to the skillet.

  • Season with salt and pepper to taste, and mix in lemon zest for a bright finish.
