  • Wash the spinach thoroughly and chop if necessary.

Cooking

  • In a large pot, heat olive oil over medium heat (around 350°F or 175°C).
  • Add the chopped onion and sauté for about 5 minutes until soft.
  • Add minced garlic and sauté for an additional minute.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Add the gnocchi and shredded chicken, and cook for 2-3 minutes.
  • Stir in the heavy cream and fresh spinach; simmer until spinach wilts (about 5 minutes).
  • Season with salt and pepper to taste.

Serving

Notes

For thicker soup, let it simmer longer. Swap spinach for kale for a different flavor. Use a non-stick pot for easier cleanup.
