  • 2 cloves garlic, minced Fresh garlic is ideal.
  • 4 cups beef broth Opt for low-sodium if needed.
  • 1 cup heavy cream Can use coconut cream for dairy-free.
  • 1 teaspoon chili powder Feel free to add more for spiciness.
  • Salt and pepper to taste Essential for enhancing all flavors.
  • Shredded cheese (for topping) Choose your favorite cheese.
  • Tortilla chips (for serving) Adds crunch and fun!

Preparation

  • Dice the onion and mince the garlic.
  • Rinse and drain the beans if using canned.
  • If using frozen corn, measure out 1 cup.

Cooking

  • In a large pot, brown the ground beef over medium heat until fully cooked.
  • Add diced onion and minced garlic, cooking until the onion is translucent.
  • Stir in your beans, corn, beef broth, and chili powder.
  • Bring to a simmer and let it cook for about 10 minutes.
  • Stir in the heavy cream, mixing well, and heat through. Season with salt and pepper.

Serving

  • Ladle the soup into bowls.
  • Top with shredded cheese and serve with tortilla chips on the side.
