Instructions
 

Preparation

  • Chop the onion and mince the garlic.
  • If using raw chicken, cube it into bite-sized pieces.
  • Open cans of Rotel tomatoes and black beans.

Cooking

  • In a large pot, sauté the onion and garlic until fragrant, about 3-4 minutes.
  • Add the chicken to the pot and cook until it’s no longer pink.
  • Stir in the Rotel tomatoes, black beans, corn, chicken broth, and taco seasoning.
  • Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  • Mix in the cream cheese until melted and creamy.

Serving

  • Ladle the soup into bowls.
