  • 1 head cauliflower Chopped into small florets.
  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 4 cups broth Chicken, beef, or vegetable.
  • 1 tablespoon olive oil For sautéing.

Seasoning

  • to taste salt
  • to taste black pepper
  • optional fresh herbs Such as cilantro or parsley.

Instructions
 

Preparation

  • Gather your ingredients.
  • Chop the cauliflower into small florets.
  • Dice an onion and mince a few cloves of garlic.

Cooking

  • In a large pot over medium heat, add a drizzle of olive oil.
  • Sauté the onions and garlic until they’re fragrant and translucent, about 3–5 minutes.
  • Toss in the cauliflower florets and your broth. Bring to a boil, then reduce to simmer until the cauliflower is tender, about 15 minutes.

Serving

  • Use an immersion blender to puree the soup until smooth.
  • Taste and season with salt, pepper, and any fresh herbs you prefer.
  • Ladle into bowls and enjoy while warm!

Notes

Use fresh ingredients for the best flavor and nutrition. Store leftovers in airtight containers for up to 4 days, or freeze for up to 3 months. Reheat on the stovetop or microwave.
