Instructions
 

Preparation

  • Wash and chop the chicken into bite-sized pieces.
  • Chop the onion and mince the garlic.
  • Prepare the broccoli by cutting it into small florets if not prepped.
  • Measure out your rice and other ingredients to have them handy.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 3-4 minutes until soft.
  • Add the minced garlic and diced chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Stir in the rice followed by the chicken broth. Bring to a simmer and let it cook for 15 minutes, or until the rice is tender.
  • Fold in the broccoli and let it cook for an additional 5 minutes.
  • Stir in the heavy cream and cheddar cheese, mixing until melted and creamy. Season with salt and pepper to taste.

Serving

  • Spoon the creamy mixture into bowls.
  • Add a sprinkle of extra cheese on top if desired.
  • Serve hot and enjoy!

Notes

For best results, avoid overcooking the chicken. The dish can be made ahead and stored for 3-4 days in the fridge or frozen for up to 2 months.
