Preparation

  • Clean and slice your leeks thoroughly to remove any grit.
  • Melt the butter in a large skillet over medium high heat until bubbling.

Cooking

  • Add the leeks, minced garlic, and a pinch of red pepper flakes into the skillet.
  • Sauté for 4-5 minutes until the leeks have wilted and become tender.
  • Pour in the broth and season with salt and pepper.
  • Cover and simmer on low heat for 8-10 minutes until the leeks are very soft.

Serving

  • Remove the lid, increase heat to medium, and add the heavy cream and parmesan.
  • Cook for a few minutes until the sauce has thickened.
  • Add lemon juice just before serving and enjoy hot.

Notes

Adjust the lemon juice to your liking for added brightness. Store any leftovers in a sealed container in the fridge for up to three days.
