Preparation

  • Dice the onion, celery, and carrots.

  • Cut the potatoes into 1-inch pieces.

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Sauté the onion, celery, and carrots for about 5 minutes, until tender.
