Preparation

  • Gather all your ingredients to streamline the cooking process, washing and chopping the fresh produce.
  • Dice the bell pepper and red onion into small pieces.
  • Rinse the black beans thoroughly to remove excess sodium and set aside.
  • Halve the cherry tomatoes and chop the cilantro.
  • Bring a pot of water to a boil over medium heat for cooking the pasta.

Cooking

  • Once boiling, add the pasta to the pot and cook according to package instructions until al dente.
  • Drain the pasta and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the cooled pasta, black beans, corn, cherry tomatoes, diced bell peppers, and red onion.
