Preparation

  • Preheat the grill to medium-high heat.
  • Wash and cut the potatoes into even-sized pieces.
  • In a pot, boil the potatoes for about 10-15 minutes until fork-tender.
  • Drain the potatoes and let them cool slightly.
  • Slice the kielbasa into bite-sized pieces.
  • Melt the butter in a bowl and mix in minced garlic, chopped parsley, lemon juice, salt, and pepper.

Cooking

  • Once the potatoes are cool enough to handle, thread them onto skewers alternating with pieces of kielbasa.
  • Brush the skewers generously with the cowboy butter mixture.
  • Place the skewers on the preheated grill.
  • Cook for about 10-12 minutes, turning occasionally until the kielbasa is browned and the potatoes are crispy.
  • Look for a golden-brown color and slightly charred edges for the best flavor.

Serving

  • Remove the skewers from the grill carefully.
  • Let them rest for a few minutes before serving.
  • Garnish with additional parsley if desired and serve warm.

Notes

Soak wooden skewers in water for 30 minutes prior to grilling to prevent burning. Try using a variety of potatoes, such as Yukon gold or red potatoes, for different textures.
